Candida, Candi-do, Candi-don't!

Candida has become a household name to a condition that so many of us deal with. A condition that we probably didn't even know was causing us discomfort. Candida is a type of fungus that is commonly found on the skin and in the gut and is usually harmless until an overgrowth occurs. It loves and alkaline home, especially in our gut! Poor fats, over consumption of protein, not enough fiber, and too much sugar can contribute to an alkaline tummy. What we are really aiming for is a balanced ph in our gut, but naturally it wants to be more acidic.

Finding options to fight the fungus amungus is probably easier than you would think! Fermented foods are going to be a great addition to your diet. Sauerkraut and kimchi are delicious and you can easily add them to so many meals! I love adding sauerkraut to zhuzh up any soup I make! But you know I'm going to make this about tea....kombucha tea! Here are my three favorite teas to make into kombucha. Jasmine, Good Night and Berries!

What you'll need:

1/4 cup of choose tea

12 cups filtered water

1 cup kombucha starter

1 cup sugar

Bring all water to a boil

Add all sugar

Add all tea

Leave to steep for 10-15 minutes (brew longer for more flavor)

Strain and let cool

Once completely cool, at least to room temperature, add kombucha starter

Let brew for 1-2 weeks (taste at 1 week if you are storing at above 70º, warmer temps brew faster)

Reserve 1 cup for your next batch

Drink or store!!

[make sure glass bottles are thick and made for brewing]

Happy Tea-toxing!
